ok..here is the recipe..i HIGHLY recommend these..if any of ya's make em..lemme know what you think :)
2 c. flour
1/2 tsp baking powder
1 c. butter or margarine
1/2 c. sugar
2 tbs. water
1 tsp. vanilla
1 egg
1 1/4 c. finely chopped nuts (i prefer almonds)
jam or jelly
Pre-heat over to 350 degrees F.
Sift flour and baking powder together twice.
Cream butter and sugar until light and fluffy.
Add water, canilla and egg yolk, then add the flour mixture and mix well.
Form dough into balls about the size of a walnut, then roll the balls in slightly beaten egg whites, then in the finely chopped nuts.
Place on lightly greases baking sheets, bake 5 minutes, remove from oven and press thumbprint in each ball (a thimble works great).
Return to oven, bake 8 to 10 minutes more (or until slightly browned).
Remove to cooling trays, fill centres with bright jam or jelly.
*yeilds about 48 cookies*

My mama used to make those, or something similar...I think she called them birds nest cookies?

I hadn't thought of those in a looong time!
i've also heard them being called bright eyes susan cookies too.
